    As a person who eats out a lots of different restaurants…. I’d be pissed if any of those dished were dropped on my table… yea they look good, but there’s basically ZERO food on those plates.. maybe he did that just to keep cost down while demonstrating.. idk

    The first scallop dish looks nice and might make a good starter. The 2nd. dish however, the scallops should be browned, not black on top, they look burnt, the dominant colour is green with no other colours, apart from the black scallops and the plate looks too empty. The 3rd. dish, the brown sauce looks too watery, maybe you should use a thicker demi glace and whats this obsession with green, with some pea green sauce splashed all over the plate. Plating like pro is definitely a bold statement to make.

    Some people in my state got involved in something called Home base , some secret mission thing like 5 years ago or so hahahaha .. no joking though .. But definitely will recommenced some of these ideas once it resumes back to normal certain people didn’t have electric /heat through the entire winter guess it was part of some mission someone was setting up with a few.. lol But will share your recipe ideas ..

    I don’t like my food lying asymmetrically at one side of the plate.. a little away from the center is nice, but not at one corner of the plate literally unless there is a plan to use the centre space for mixing with something else

    Our mandolin at work came with a little attachment to keep your hands out of the way. Yeah you lose the butt of whatever you’re using but you won’t lose the heel of your palm.

    Even numbers when plating makes your brain subconsciously look for symmetry. So if symmetry isn’t achieved, the plating looks off.

    Tip number 1.. Put on some fkn gloves.. Runs greens & flowers through salad spinner but then puts greens and flowers on his hand before plating.. THE OILS IN YOR HANDS WILL MAKE DELICATE HERBS & FLOWERS WILT BEFORE THEY HIT THE TABLE !
