How to clean prepare and cook Hog Maws & Chitterlings
Soul Food Hog Maws & Chittelins Recipe
Boil Hog Maws in a pot of water for 25-30 mins
Once they cool off, remove fat as shown in video, and slice into small thin pieces.
Pull slimy clear fat from chitterlings, starting from the tip of the chitterlings. Afterwards, cut the chitterlings into small pieces (don’t leave them big and long).
Chop up 1/2 green pepper, 1/2 red pepper, 1/2 white onion, 2 stalks of celery into small pieces
Place Hog Maws and Chitterlings into a big pot
Add chopped vegetables and 2-3 tsps of minced garlic.
Add 1/4 to 1/2 cup of apple cider vinegar and a small amount of black pepper
Fill pot with water 2 inches from the top
Cover with a top leaving a small crack on the side
Cook on high heat for 4 hours
Once Hog Maws & Chitterlings are tender add a small amount of Crushed red peppers, Hot sauce and salt to taste

I dated a girl who did not grow up eating chittlins and she just rinsed them, omg, the whole house smelled horrible,I threw it in the yard for the dogs. you have to clean them like he did. I sometimes just do the hog maws like spicy with rice and greens. I lost my tast for chittlins when that happened but yours look good. I have to trust somebody to eat their chittlins. my grandma passed and I only eat my Aunties now at Christmas. I don’t even trust myself.

Boy those things stank when cleaning and cooking them. Ironically white people consider chitlings gourmet food these days driving up the price. Black people can no longer afford to eat it đ unfortunately my mom took her recipe to the grave with her. We tried to get her to write down her recipes before she passed but she refused….served with black eyed peas and rice is the way to go

You still have to clean the edges of the chitterlings. There is grass and sand in the curve of the edges. Also, you have to boil the chitterling about 10 mins and pour off that stink mess. I boil it twice and pour off the stink. Then I put in fresh water and then, season the chitterling. I don’t use bell pepper nor celery. I do use onions. Season all, red and black pepper and salt. No garlic. There is garlic in the season all.

Why do you want to remove the fat. Is it because you don’t want much fat, or does it have a weird texture, or?? I understand the colored stuff.

Good recipe!!! But I do mine in a instant pot on normal pressure for 45-60min depending on how tender you want them.

Why would you add butter to chitterlings when you cooking chitlins is pork and it makes his own grease then you put the hot sauce in it. You fuck in the whole thing up my family been cooking chitterlings for hundreds of years and we come from the south Georgia and what you doing thatâs not how they did it and they didnât have to add no red bell pepper you just use the green one and I donât know if you add celery Iâm not for sure, but you should have if you didnât but I donât think youâre a good cook. I think you OK your food is edible. I went back and look and you did it celery, but I just couldnât get past the butter and put the hot sauce in it while itâs cooking thatâs optional once itâs done and then you let other people whoâs eating it put a hot sauce to their liking.
